      以植物油及中链脂肪酸为原料制备中长链脂肪酸甘油三酯功能脂质,研究其理化特性,为相关功能脂质产品开发奠定基础。本研究从各类中链脂肪酸中筛选出最适脂肪酸,与山茶油进行酶促酸解反应制备中长链脂肪酸甘油三酯,进行最适反应条件优化,并分析其氧化特性、热力学特性及流变学特性。结果表明,从辛酸(C8:0, Oc)、癸酸(C10:0, D)、月桂酸(C12:0, La)中优选出癸酸作为最适中链脂肪酸,与山茶油进行酶促酸解反应制备了富含1,3-二癸酸-2-油酸甘油三酯的结构脂质(DOD-riched SLs);酶促酸解反应最适条件为反应温度55℃、底物摩尔比1:12(n山茶油 : n癸酸)、酶质量分数 10%,仅需3 h反应即可达平衡,制备得到了DOD质量分数达66.09%的结构脂质;酶促酸解反应过程中脂质氧化程度较低,所得DOD-riched SLs的过氧化化值为0.111 g/100 g;DOD-riched SLs熔融温度范围为-25.89 ℃至-5.38 ℃,结晶温度范围为-47.62 ℃至-7.61 ℃;DOD-riched SLs表现为牛顿流体,黏度为0.025 Pa.s。DOD-riched SLs优良的热稳定性及流动特性为其作为功效成分用于功能脂质产品开发及相关加工工艺研究奠定了基础,也为山茶油高值化利用开辟了新路径。

      Medium and long chain fatty acid triglyceride (MLCT) functional lipids were prepared from vegetable oil and medium chain fatty acids, and their physicochemical properties were studied to lay a foundation for the development of related functional lipids. The optimum fatty acid was selected from various kinds of medium chain fatty acids, and the MLCT were prepared by enzymolysis reaction with Camellia oil. The optimal reaction conditions were screened, and the oxidation characteristic, thermodynamic and rheological properties of MLCT were analyzed. The result shows that decanoic acid was selected from caprylic acid(C8:0, Oc), decanoic acid (C10:0, D) and lauric acid (C12:0, La) as medium chain fatty acid for enzymatic acidolysis reaction with Camellia oil, for the preparation of 1,3-didecyl-2-oleoylglycerol riched structured lipids (DOD-riched SLs). The optimal reaction conditions were screened, and the peroxidation value, thermodynamic and rheological properties of DOD-riched SLs were analyzed. The results showed that the optimum conditions of enzymatic acidolysis reaction were 55 ℃, molar ratio of substrate 1:12 (nCamellia oil : ndecanoic acid), quality fraction of enzyme 10%, and the reaction could reach equilibrium in only 3 hours, and the structured lipids with quality fraction of DOD 66.09% were prepared. The oxidation degree of lipids during enzymatic acidolysis reaction was low, and the peroxidation value of DOD-riched SLs was 0.111 g /100 g. DOD-riched SLs had a melting temperature range of -25.89 °C to -5.38 °C, and a crystallization temperature range of -47.62 °C to -7.61 °C. DOD-riched SLs was manifested as Newtonian fluid, and its viscosity was 0.025 Pa.s. The excellent thermal stability and low viscosity characteristic of DOD-riched SLs lay a foundation for its application as an effective component in the development of functional lipid products and the related processing. This also opens up a new way for the high value utilization of Camellia oil.
