磷化氢熏蒸可以有效防治玉米储藏期害虫。通过测定不同浓度的磷化氢熏蒸对玉米籽粒发芽率、色泽、胚乳蛋白质和淀粉组分、胚芽中脂类相关组分等生物活性成分变化,研究磷化氢熏蒸对玉米品质变化的影响。结果表明,随着磷化氢熏蒸浓度的升高,玉米胚芽脂肪含量呈现上升的趋势,玉米发芽率、胚芽脂肪酸含量和脂肪酶的活动度都有所降低,玉米色泽、胚乳中蛋白质含量、淀粉总含量无明显变化。但是随着熏蒸时长的增加,胚乳总淀粉含量略有减小,直链淀粉含量增加,支链淀粉含量减小,并且不同熏蒸浓度下的胚芽脂肪酸值含量略有上升,脂肪酶活动度随之下降。 |

Phosphine fumigation can effectively control pests during corn storage. The effects of phosphine fumigation on the quality of maize were studied by measuring the changes of biologically active components such as germination rate, color, endosperm protein and starch components, and lipid-related components in germs at different concentrations of phosphine fumigation. The results showed that with the increase of phosphine fumigation concentration, the fat content in corn germ showed an upward trend, the germination rate of corn, the fatty acid content of germ and the activity of lipase decreased. There was no significant change in corn color, protein content in endosperm, and total starch content. However, with the increase of fumigation time, the total starch content of endosperm decreased slightly, the amylose content increased, the amylopectin content decreased, and the fatty acid value of embryo at different fumigation concentrations increased slightly, and the lipase activity decreased. |
