为考察高压脉冲电场处理对麦麸结构和理化性质的影响,以小麦麦麸为研究对象,利用不同强度(10、20、30、40、50 kV/cm)的高压脉冲电场处理麦麸,比较麦麸的基本成分、活性成分、微观结构以及理化性质。麦麸经高压脉冲电场处理后,淀粉颗粒表面出现不同程度的凹陷,纤维表面出现小孔洞,结晶结构向非结晶结构和无定形结构转变,原本不饱和的叁键和累积双键发生氧化还原反应,生成饱和程度较高的双键,结构的变化使得理化性质发生相应的改变。与未经脉冲电场处理麦麸相比,20 kV/cm脉冲电场处理后麦麸的总黄酮、总酚溶出量分别提高了9.17% 、22.14%,DPPH?清除率、ABTS+?清除率、Fe3+的还原能力分别提高了35.11%、23.40%、23.15%;40 kV/cm脉冲电场处理后麦麸对胆固醇和亚硝酸钠的吸附能力分别提高了13.68%和19.94%,阳离子交换能力也显著提高;50 kV/cm的脉冲电场处理后麦麸中脂肪酶、脂肪氧化酶的活力分别降低62.56%和7.12%。结果表明,20 kV/cm脉冲电场适用于麦麸抗氧化物质的提取和抗氧化活性的提高,40 kV/cm脉冲电场适用于麦麸吸附能力和交换能力的提高,50 kV/cm脉冲电场适用于麦麸中脂肪酶、脂肪氧化酶活性的抑制。 |

In order to investigate the effect of high-voltage pulse electric field treatment on the structure and physicochemical properties of wheat bran, wheat bran was used as the research object. Different intensities (10, 20, 30, 40, 50 kV/cm) of high-voltage pulse electric field were used to treat wheat bran, and the basic components, active components, microstructure, and physicochemical properties of wheat bran were compared. After being treated with a high-voltage pulsed electric field, wheat bran exhibited varying degrees of indentation on the surface of starch granules, small pores on the fiber surface, and a transition from crystalline to amorphous structure. The originally unsaturated triple bonds and accumulated double bonds occurred redox reactions, generating double bonds with higher saturation levels. The structural changes resulted in corresponding changes in functional properties. Compared with untreated wheat bran, the total flavonoid and total phenolic leaching of wheat bran treated with a 20 kV/cm pulsed electric field increased by 9.17% and 22.14%, respectively, the DPPH ? clearance rate, ABTS+? clearance rate, and Fe3+reduction ability increased by 35.11%, 23.40%, and 23.15%, respectively; The adsorption capacity of cholesterol and sodium nitrite on wheat bran treated with a 40 kV/cm pulsed electric field increased by 13.68% and 19.94%, respectively, and the cation exchange capacity was significantly improved; the activities of lipase and lipoxygenase in wheat bran treated with a 50 kV/cm pulsed electric field decreased by 62.56% and 7.12%, respectively. The results indicate that the 20 kV/cm pulsed electric field is suitable for the extraction of antioxidant substances from wheat bran and the improvement of antioxidant activity, the 40 kV/cm pulsed electric field is suitable for improving the adsorption and exchange capacity of wheat bran, and the 50 kV/cm pulsed electric field is suitable for inhibiting the activities of lipase and lipoxygenase in wheat bran. |
