为了开发食用油过氧化值(PV)的快速测定方法,本文基于对苯磺酰异氰酸酯(TSI)与食用油中氢过氧化物反应,及其在2235 cm-1处的异氰酸酯(-N=C=O)反对称吸收峰变化的原理,通过透射傅里叶中红外光谱法构建过氧化值模型。研究校正了水分副反应引起的误差,分析了模型的准确度,并与化学滴定法进行了比较。结果表明:其模型验证集FTIR法的重复性(SDr = 0.0037 g/100g)和优于滴定法(SDr = 0.0046 g/100g);不同种类食用油实际样品的外部验证结果表明FTIR法的重复性(SDr = 0.0037 g/100g)要明显好于滴定法(SDr = 0.0079 g/100g),预测值和标准滴定值高度相关(R2 = 0.9966),回归系数1.004,截距0.001,标准差为0.0065,显示所建方法与国标法测定过氧化值结果高度一致。因此,TR-FTIR法用于食用油中过氧化值的快速测定是可行的。 |

In order to develop a rapid determination method for peroxide value (PV) in edible oil, the present study built a Fourier Transformation Infrared Spectroscopic model based on measuring the variation in the antisymmetric absorption of isocyanate (-N=C=O) at 2235 cm-1 caused by reaction of p-toluene sulfonyl isocyanate (TSI) with hydrogen peroxide in edible oil. The model was revised in term of side reaction with water. The prediction accuracy were measured and compared with standard titrimetric method. The results demonstrated that the repeatability (SDr = 0.0037 g/100g) for the FTIR method in the model validation set were better than those of the titration method(SDr = 0.0046 g/100g). Meanwhile, as for external validaton samples, the repeatability (SDr = 0.0037 g/100g) of the FTIR method were also obviously better compared to the titration (SDr = 0.0079 g/100g). In addition, the predicted values of the FTIR method in different edible oil were highly correlated with titration values (R2 = 0.9966) along with the regression coefficient of 1.004, the intercept of 0.001, and the standard deviation of 0.0065, which suggested that FTIR model developed has high accuracy. Therefore, the TR-FTIR method can be accessible to provide a rapid determination for peroxide value in the edible oils. |
