藻油中富含的二十二碳六烯酸(DHA)作为人体重要的活性物质,其稳定性差,有不良气味。以乳清蛋白为水相,以富含DHA的藻油为油相,通过添加壳聚糖,海藻酸钠为材料制备多层乳液来包埋DHA藻油,与Ca2+交联制备负载DHA藻油的凝胶微球。在单因素实验基础上,采用Box-Behnken 设计对藻油凝胶微球的包埋工艺条件进行优化,确定了制备DHA藻油凝胶微球的最佳工艺:乳清蛋白质量浓度2 g/100 mL,油水两相体积比例1:9,壳聚糖质量浓度1.7 g/100 mL,海藻酸钠质量浓度1.7 g/100 mL,Ca2+质量浓度 6 g/100 mL,包埋率为(82.69±1.87) %。通过热重分析仪,傅里叶红外光谱仪,激光粒度仪,扫描电子显微镜对其进行表征,结果显示以最佳包埋工艺制作的DHA藻油凝胶微球粒径分布集中,成功包埋且包埋效果较好。 |

Docosahexaenoic acid (DHA), which is rich in algal oil, is an important active substance in human body, which has poor stability and bad odor. With whey protein as water phase and DHA rich algal oil as oil phase, a multi-layer emulsion containing DHA algal oil was prepared by adding chitosan and sodium alginate as materials, and a gel microsphere loaded with DHA algal oil was prepared by crosslinked with Ca2+. On the basis of single factor experiment, Box-Behnken design was used to optimize the embedding process conditions of algal oil gel microspheres, and the optimal process for preparing DHA algal oil gel microspheres was determined: whey protein concentration 2 g/100 mL, oil-water two-phase volume ratio 1: 9, the mass concentration of chitosan is 1.7 g/100 mL, sodium alginate is 1.7 g/100 mL, Ca2+ is 6 g/100 mL, and the embedding rate is (82.69±1.87) %. The DHA algal oil gel microspheres were characterized by thermogravimetric analyzer, Fourier infrared spectrometer, laser particle size analyzer and scanning electron microscope. The results showed that the particle size distribution of DHA algal oil gel microspheres prepared by the best embedding technology was concentrated, and the embedding effect was good |
