      摘 要 通过HS-SPME/GC-MS技术,对不同含水量以及储藏时间的甬优15优质稻的挥发性成分进行分析,此次实验结果表明:随着储藏时间的延长,烯烃类、醇类、醛类物质的含量呈上升趋势,酮类和酯类变化不明显,烷烃类和酸类呈下降趋势:含水量14.5%的甬优15的清香物质含量多于13.1%和13.8%含水量的;当储藏180天时,很多清香物质的含量达到峰值,随着继续储藏,清香物质含量降低,储藏效果变差。1-壬醇随着储藏时间延长呈上升趋势,可作为甬优15储藏时间延长的醇类标志物;邻苯二甲酸二异丁酯其含量随着储藏时间的延长先下降后上升再下降,可作为甬优15的酯类标志物;反式-2-壬烯醛的含量随着储藏时间先上升后降低,且含水量越高,其含量越高,可作为甬优15的醛类标志物。

      Abstract By HS-SPME/GC-MS technique, the volatile components of high quality rice yongyou 15 of different water content and storage time were analyzed. The experimental results showed that with the extension of storage time, the contents of alkenes, alcohols and aldehydes showed an upward trend, while the changes of ketones and esters are not obvious, and Alkane and acids showed a downward trend; 14.5% of water content contained more scent substances than 13.1% and 13.8% of yongyou 15. At 180 days, the content of many fragrant substances reaches theirs peak. As the storage time continueed, the content of fragrant substances decreased, so the storage effect becomed worse. 1-nonyl alcohol showed an increasing trend with the extension of storage time, which could be used as the alcohol marker for the extension of storage time of yongyou 15. The content of diisobutyl phthalate decreased first, then increased and then decreased with the extension of storage time, which could be used as the ester marker of yongyou 15. The content of trans-2-nonenal rose first and then decreased with the storage time, and the higher the water content was, the higher the content was, which could be used as the aldehydes marker of yongyou 15.
