      摘 要:为响应国家的“中国好粮油”行动计划号召,遴选优质粮油产品,完善粮食质量安全检验监测体系,本研究以淮安大米为研究对象,主要测定了淮安大米的含水量、直链淀粉含量、蛋白质含量、整精米率、出糙率、重金属含量、糊化特性、质构特性等理化指标,并分析了理化指标与淮安大米食味品质之间的关系。研究发现淮安稻谷样品的整精米率和出糙率达到国家一级标准,此外研究发现淮安大米的含水量与直链淀粉整体较高、糊化与质构特性良好。独特的理化特性造就了淮安大米自然清香,口感香甜柔糯并富有弹性的特点。对淮安地区的大米进行质量评价,有利于实施名优特产品产地保护,保护地区名牌和特色产品,并对淮安地区大米质量标准的制定提供一定的理论依据。

      Abstract: In response to the“China Good Grain and Oil” Action Plan ,the selection of high-quality grain and oil products , the improvement of food quality and safety monitoring systems, this study determined the physicochemical indexes of Huai’an rice which was the research object,such as water content, protein content, total polished rice rate, outburst rate, heavy metal content, pasting characteristics, texture characteristics, etc., which studied relationship between physical and chemical indexes and rice food quality . The study found that the milled rice rate and yield rate reached the national level standard. It was also found that the water content and amylose content of Huai’an rice were high, and its gelatinization and texture properties were good. The unique physical and chemical properties make Huai''an rice natural and fragrant, sweet, soft and elastic. The quality evaluation of rice in Huai''an area is conducive to protect special production areas ,brand names and specialty products in the region, which provides certain theoretical basis for the formulation of rice quality standards in Huai''an.
