      为预测油茶籽油在储藏过程中的氧化情况,为油茶籽油的安全贮藏提供一定的理论依据,研究20℃、25℃、40℃、60℃下油茶籽油酸价和过氧化值随储藏时间的变化趋势,并采用动力学模型和人工神经网络模型进行拟合。结果表明:酸价和过氧化值的变化符合一级动力学方程,对应的动力学模型方程分别为: 、 ,模型预测值和实测值之间的平均相对误差分别为:6.66%、42.17%;酸价和过氧化值对应的神经网络模型训练效果佳,泛化能力好,拟合度达0.98以上,预测值和实测值之间的平均相对误差分别为:2.34%、6.38%;神经网络模型较之动力学模型,误差更小,能更加准确预测油茶籽油在储藏过程中酸值和过氧化值的变化趋势。
英文摘要:
      In order to predict the oxidation of Camellia oleifera seed oil during storage and provide a theoretical basis for the safe storage of Camellia oleifera seed oil,the acid value and peroxide value of Camellia oleifera seed oil at 20℃, 25℃,40℃and 60℃ were studied. The trend was observed with storage time, and the dynamic model and artificial neural network model were used for fitting. The results show that the changes of acid value and peroxide value accord with the first-order kinetic equation, and the corresponding kinetic model equations are: , , the average relative error between the predicted and measured values of the two models are: 6.66%, 42.17%; the neural network models corresponding to the acid value and the peroxide value have good training effects and good generalization abilities. The fitting degree is above 0.98. The average relative error between predicted and measured values is 2.34% and 6.38% respectively. The neural network model has smaller error than the dynamic model. It can more accurately predict the change trend of acid value and peroxide value of camellia oleifera seed oil during storage.
